Mayonnaises available in the market are usually not vegan and one of their components is egg, which is an animal product that vegan vegetarians do not use. But don't worry at all, you can prepare homemade and healthy vegan mayonnaise with minimal ingredients within 5 minutes. Vegan Mayonnaise is an excellent choice as a food seasoning, this diet sauce is noted not only for its light texture, but also for its excellent nutritional value. In addition, it does not increase bad cholesterol.
One of the items used in this recipe is aquafaba, which is made by mixing chickpea juice and has a lot of protein. Aquafaba is an excellent substitute for eggs, which is even used to prepare cakes and desserts. You can use this vegetable mayonnaise to prepare all kinds of salads, especially salads, sandwiches and mix with all kinds of sauces.
Ingredients for vegan mayonnaise:
Apple cider vinegar (or white vinegar), ½ teaspoon
Maple syrup (or sugar nectar, or juice, or any natural sweetener), 1-3 teaspoons
Sunflower oil (or any odorless vegetable oil), 1-¾ cups
How to make homemade vegan mayonnaise with aquafaba:
Pour aquafaba or pea water into a glass container along with ground mustard, sea salt, apple cider vinegar and desired syrup.
Measure the oil with a measuring cup and add it. Then, with a mixer or an electric mixer at the highest speed, beat the mixture slowly for 1-2 minutes.
Move the electric mixer up and down until some air reaches the end. If it is too thin, add more oil. (The more oil you add, the creamier, thicker and denser its texture will be. Of course, you will not need more than the recommended amount.)
Adjust the taste if necessary and add more sweetener of your choice (keeping in mind that nectar or maple syrup will make it thicker).
Use immediately or refrigerate in a covered container to chill - about 4 hours. It thickens even more in the refrigerator!
Store leftover mayonnaise in the refrigerator for up to 2 weeks (sometimes longer).
Vegan Mayonnaise is suitable for salad and all kinds of salads, sandwiches and combinations with other sauces!
